Orange Marmalade Oatmeal Cookies

3/4 cup Earth Balance or margarine (1-1/2 sticks)
1 cup brown sugar
1/3 cup orange marmalade
egg substitue for two eggs (or two eggs)
1 teaspoon almond extract (or vanilla)
1-3/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
2-1/2 cups oats (old fashioned or quick cooking)
3/4 cup roughly chopped pecans (optional, but really good)

Mix together Earth Balance or margarine and brown sugar.  Add egg substitute, orange marmalade, almond extract and mix well.  Add dry ingredients, oats and nuts.  Mix thoroughly. 

Drop by spoonfuls onto baking sheet. Bake at 350 degrees. Check for doneness after 12 minutes. Edges should be lightly browned and centers still slightly soft. The coookies become firmer as they cool.
